Turkey Stir-Fry with Bok Choy

  • 2 tablespoons olive oil
  • ½ pound bacon chopped
  • 1 small red onion chopped
  • 1 pound ground turkey
  • 4 cups chopped bok choy
  • 2 cups chopped kale
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon coconut aminos
  • sea salt and freshly ground black pepper to taste


  • In a large skillet over medium-high heat, heat oil and add the bacon and onion and cook until almost crisp. Next, add the ground turkey, cook for 5 to 8 minutes or until cooked throughout.
  • Add the next three ingredients (Bok Choy through ginger) and continue cooking for 5 to 7 minutes or until the vegetables have softened slightly. Add coconut amino and season mixture to taste as needed with sea salt and pepper. Serve warm.
