Pork and Cauliflower Stew
Ingredients
- 1 tablespoon coconut oil
- 3/4 cup chopped onion
- 1 clove garlic minced
- 1 pound boneless pork shoulder cubed
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- sea salt and freshly ground black pepper to taste
- 1 1/2 cups low sodium chicken broth or use bone broth
- 1 15-oz. can stewed tomatoes
- 4 cups cauliflower florets
Instructions
- In a large pot, heat the oil over medium-high heat. Cook the onion and garlic until soft.
- Add in the pork and brown for 3-4 minutes per side. Stir in the remaining ingredients and bring the mixture to a boil.
- Reduce the heat to a simmer and cook for 35-40 minutes, or until the vegetables are tender and the pork is cooked through and tender. Serve hot.
