Beef and Bacon Bourguignon
Ingredients
- 2 medium carrots peeled and chopped
- 4 cups chopped cauliflower florets
- 1 cup pearl onions peeled
- 3 cups cooked and chopped bacon
- 10 cups low sodium beef broth or use bone broth
- 2 tablespoons tomato paste
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon garlic powder
- 1 teaspoon ground ginger
- sea salt and freshly ground black pepper to taste
- ¼ cup chopped fresh parsley
Instructions
- In a large cooking pot over medium heat, add the first 6 ingredients (beef through broth) and bring to a simmer. Then add the remaining ingredients and mix well to combine. Cover and continue to simmer. Cook until vegetables are softened and the meat has cooked throughout, about 60 minutes. Serve warm
