Pork Carnitas Soup
- 1 pound ground pork
- 2 large shallots minced
- 2 cloves garlic minced
- 3 cups low sodium chicken broth
- 1 cup shredded carrots
- 1/2 cup chopped green onion
- 1/4 cup fresh lime juice
- 1 teaspoon ground ginger
- 1/4 cup chopped basil
- In a large pot over medium heat, add pork, shallots and garlic. Cook for 5 minutes.
- To the pot, add the next 5 ingredients (chicken broth through ginger). Stir and simmer on low for 15 minutes, until vegetables are tender. Sprinkle basil on top and serve warm.
