Pork Carnitas Soup

  • 1 pound ground pork
  • 2 large shallots minced
  • 2 cloves garlic minced
  • 3 cups low sodium chicken broth
  • 1 cup shredded carrots
  • 1/2 cup chopped green onion
  • 1/4 cup fresh lime juice
  • 1 teaspoon ground ginger
  • 1/4 cup chopped basil


  • In a large pot over medium heat, add pork, shallots and garlic. Cook for 5 minutes.
  • To the pot, add the next 5 ingredients (chicken broth through ginger). Stir and simmer on low for 15 minutes, until vegetables are tender. Sprinkle basil on top and serve warm.


SERVING SUGGESTION: Serve with a Big Salad tossed with Leanne’s Basic Vinaigrette (In a large bowl, toss together torn lettuce (not Iceberg - no nutrition) and salad veggies of your choice. In a small bowl, whisk together 3 tablespoons extra virgin olive oil, 1 tablespoon balsamic vinegar, 1 clove pressed garlic and a pinch of dried basil and oregano; drizzle dressing over salad.)
