Lemon Garlic Chicken Stew
Ingredients
- 1 large onion sliced
- 2 large carrots chopped
- 2 large stalks celery chopped
- 1/2 cup low sodium chicken broth
- 4 large chicken breasts with the bone
- sea salt and freshly ground black pepper to taste
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 large lemon sliced
Instructions
- In a large crock cooker, place the first 4 ingredients (onion through chicken broth).
- To the crock cooker, add the chicken and season with salt and pepper, garlic and cumin. Layer lemon slices on chicken and cover.
- Cook on LOW for 6 to 8 hours, until chicken is falling off the bone and vegetables are tender. Serve warm.
Notes
SERVING SUGGESTION: A tossed green salad (lettuce -not iceberg-, salad veggies and low carb salad dressing).
GLUTEN FREE: Make sure chicken broth is gluten free.
