Creamy Kale and Hamburger Stir Fry

  • 1 pound ground beef
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon chopped thyme
  • sea salt and freshly ground black pepper to taste
  • 1 tablespoon ground cumin
  • 1 cup heavy cream
  • 1/2 cup low sodium beef broth
  • 4 cups chopped kale


  • In a large skillet over medium heat, add the first 6 ingredients (beef through cumin). Cook for 10 minutes, until beef is brown.
  • To the beef mixture add the remaining ingredients (heavy cream through kale) and stir. Cover and reduce heat to low. Cook for 10 minutes, until kale is tender. Serve warm.


SERVING SUGGESTION: Turnip fries (peel turnips and cut into “fries”; toss with olive oil and bake on a cookie sheet in a preheated 375-degree oven, turning once, until tender; sprinkle with salt, pepper and garlic powder to taste).
GLUTEN FREE: Make sure beef broth is gluten free.
