Creamy Pork and Zucchini Chili

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 1/2 pounds ground pork
  • Sea salt and freshly ground black pepper to taste
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 cup diced zucchini
  • 4 ounces tomato paste
  • 5 cups canned diced tomatoes
  • 2 cups low sodium chicken broth or use bone broth
  • 1 cup full fat coconut milk
  • 1 1/2 cups baby spinach
  • 1/4 cup chopped cilantro


  • In a large pot on medium-high heat, heat oil and add the garlic through onion. Cook until soft and then add in the ground pork, salt, pepper, oregano and basil. Cook until the meat is browned, breaking up with a spoon.
  • Add the next 5 ingredients (zucchini through coconut milk), stir and reduce heat to medium-low and bring to a simmer, seasoning with salt and pepper to taste. Cover and cook for 30 minutes, stirring regularly. Stir in the spinach and cilantro and serve.


SERVING SUGGESTION: Serve with sliced avocado, sprinkled with chopped cilantro, a squeeze of lime and a sprinkling of sea salt.
