Broccoli and Pulled Asian Pork
Ingredients
- 1 pound pork shoulder cubed
- 1 cup coconut aminos
- 2 tablespoons avocado oil
- 1 1/4 cups low sodium chicken broth or use bone broth
- 1 cup chopped mushrooms
- 3 cups broccoli slaw
- 1 cup shredded carrots
- 1/4 cup chopped cilantro
- 1 teaspoon ground coriander
- sea salt and freshly ground black pepper to taste
Instructions
- In a large crock cooker, add the pork. In a large bowl, mix the coconut aminos, oil and chicken broth. Pour the liquids over the pork. To the crock cooker, add the remaining ingredients and cover. Cook on LOW for 6 to 8 hours, until pork is very tender and white in the center. Remove pork and shred with two forks. Return pork to the crock cooker and stir. Serve warm.
