Grilled Chile Rubbed Pork Chops
- 2 tablespoons olive oil
- 3 tablespoons New Mexican chili powder
- 2 cloves garlic minced
- 1 teaspoon dried thyme
- 1 tablespoon cumin
- 1 tablespoon honey
- 1 teaspoon allspice
- sea salt and freshly ground black pepper to taste
- 6 pork chops 6-ounce
- In a large bowl, add olive oil, chile powder, garlic, thyme, cumin, honey, allspice and sea salt and freshly ground black pepper to taste. Marinate in the refrigerator for 30 minutes.
- On an outdoor or indoor grill heat olive oil over medium high heat and grill pork 7 to 8 minutes per side until cooked through. Remove and thinly slice pork.
SERVING SUGGESTION: Steamed cauliflower and steamed small new red potatoes tossed with a little butter and chopped parsley. VEGETARIAN: Use tofu instead of pork chops.
