Halibut with Cucumber Salsa
Ingredients
- 2 cups finely chopped cucumber
- 1/2 cup finely chopped tomato
- 1/4 cup chopped red onion
- 2 tablespoons minced fresh parsley
- 1 large jalapeno pepper seeded and chopped
- 4 teaspoons minced fresh cilantro
- 1 clove garlic minced
- 1/4 cup sour cream
- 1 1/2 teaspoons lemon juice
- 1 1/2 teaspoons lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon sea salt
- 4 halibut fillets
- olive oil
Instructions
- In a medium sized bowl, combine cucumber, tomato, onion, parsley, jalapeño, cilantro and garlic.
- In a small bowl, combine sour cream, lemon juice, lime juice, cumin and salt. Pour over cucumber mixture and toss gently to coat.
- Preheat grill to medium high heat. Coat with olive oil and place halibut on rack, grill 5-7 minutes per side until fish flakes easily with a fork.
- Top fish with salsa and serve warm.
