Garlic Herb Pork Chops
- 1 tablespoon olive oil
- 4 pork chops
- 1 large onion
- 1 1/2 cups diced fresh tomatoes
- 5 cloves garlic diced
- 2 teaspoons oregano
- 1 teaspoon sage
- 1 teaspoon basil
- Heat oil in a large pan on medium heat for 20 seconds. Brown pork chops 1 minute on each side.
- Stir in onions and flip pork chops after 2 minutes on each side.
- Add tomatoes, garlic and spices. Simmer for 8 minutes.
SERVING SUGGESTION: Serve on a bed of zucchini pasta. (Julienne or cut large zucchini lengthwise into thin strips; stir-fry in a skillet coated with olive oil over medium-high heat until slightly limp). GLUTEN FREE: No changes necessary.
