BLT Lettuce Wrap
- 1 tablespoon coconut oil
- 4 medium eggs
- 2 large avocados peeled, pitted and sliced
- 1 large tomato sliced
- 4 slices bacon cooked
- 4 large leaves Romaine lettuce
- Heat coconut oil in a large frying pan over medium heat. In the hot pan, fry each egg to desired level of doneness.
- On individual plates, layer lettuce leaves, avocado, tomato, bacon, egg and serve.
