BLT Lettuce Wrap

  • 1 tablespoon coconut oil
  • 4 medium eggs
  • 2 large avocados peeled, pitted and sliced
  • 1 large tomato sliced
  • 4 slices bacon cooked
  • 4 large leaves Romaine lettuce


  • Heat coconut oil in a large frying pan over medium heat. In the hot pan, fry each egg to desired level of doneness.
  • On individual plates, layer lettuce leaves, avocado, tomato, bacon, egg and serve.
