Banana Walnut Muffins
Ingredients
- 1 1/2 cups almond flour or almond meal
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/8 teaspoon sea salt
- 2 teaspoons ground cinnamon
- 1/8 teaspoon nutmeg
- 3/4 cup mashed ripe bananas
- 3 large eggs
- 1/4 cup honey
- 2 teaspoons almond butter
- 1 tablespoon chopped walnuts
- 1 teaspoon coconut oil
Instructions
- Preheat oven to 350 degrees.
- Grease muffin pan with coconut oil. Combine the first 6 ingredients (almond flour through nutmeg) and mix well. To the dry ingredients, add the banana, eggs, honey, and almond butter. Mix until well combined. Fill each muffin 2/3 full, and sprinkle chopped walnuts on each muffin.
- Bake for 25 minutes, or until muffins spring back when touched.
