Pork and Cauliflower Stew

Ingredients
  

  • 1 tablespoon coconut oil
  • 3/4 cup chopped onion
  • 1 clove garlic minced
  • 1 pound boneless pork shoulder cubed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • sea salt and freshly ground black pepper to taste
  • 1 1/2 cups low sodium chicken broth or use bone broth
  • 1 15-oz. can stewed tomatoes
  • 4 cups cauliflower florets

Instructions
 

  • In a large pot, heat the oil over medium-high heat. Cook the onion and garlic until soft.
  • Add in the pork and brown for 3-4 minutes per side. Stir in the remaining ingredients and bring the mixture to a boil.
  • Reduce the heat to a simmer and cook for 35-40 minutes, or until the vegetables are tender and the pork is cooked through and tender. Serve hot.
