Instructions
In a large pot, heat the oil over medium-high heat. Cook the onion and garlic until soft.
Add in the pork and brown for 3-4 minutes per side. Stir in the remaining ingredients and bring the mixture to a boil.
Reduce the heat to a simmer and cook for 35-40 minutes, or until the vegetables are tender and the pork is cooked through and tender. Serve hot.
