In a large blender or food processor, add 1 tablespoon olive oil, shallots, 1/2 cup cilantro, zest of the lime, ginger, garlic, chilies and sea salt and freshly ground pepper to taste.
Blend 1 minute.
Mix ground pork and blender mixture together and form 6 burgers.
In a large skillet, heat 1 tablespoon olive oil over medium high heat and sear pork burgers 5 to 6 minutes per side until pork is cooked through.
In a small bowl, add mayonnaise, remaining cilantro and lime juice. Stir to combine. Serve burgers on the bun with cilantro lime mayonnaise.
