Tasty Baked Potato

Ingredients
  

  • 1 large baked russet potato
  • 1/4 cup spinach
  • 3 tablespoons shredded low fat Cheddar cheese
  • 1 tablespoon low fat sour cream
  • Salt and pepper to taste

Instructions
 

  • Split a large baked russet potato and stuff it with 1/4 cup spinach, 3 tablespoons shredded low fat Cheddar cheese, 1 tablespoon low fat sour cream and salt and pepper to taste. Nuke in the microwave until cheese starts to melt.
