Heat the olive oil in a large skillet over medium heat; add pork chops and season with oregano and salt and pepper to taste; brown chops on both sides and cook through.
Remove from skillet and keep warm.
Add spinach and garlic to skillet and sauté for a minute or two. Slowly add half and half, blending well.
Sprinkle cheese on top and stir to melt cheese.
Return pork chops to skillet and heat through. Serve chops over spinach mixture.
