Egg Salad on Butter Lettuce

  • 4 large eggs hard boiled, peeled and chopped
  • 2 medium avocados pitted and chopped
  • 2 tablespoons chopped parsley
  • 2 teaspoons ground garlic
  • 1 teaspoon ground paprika
  • Sea salt and freshly ground black pepper to taste
  • 4 cups chopped butter lettuce
  • 4 teaspoons coconut aminos


  • In a medium-size bowl, mix together ingredients 1 to 6 (eggs through salt and pepper) to form an egg salad.
  • Place egg salad on top of butter lettuce drizzled with coconut aminos and serve immediately.
