Tomato Thyme Halibut

Servings 4 people

Ingredients
  

  • Coconut oil
  • 4 halibut fillets or use another firm-fleshed white fish, 6-oz.
  • Sea salt and freshly ground black pepper to taste
  • 2 cups cherry tomatoes halved 1 tablespoon tomato paste
  • 1 tablespoon lemon juice
  • 1 tablespoon white wine
  • 2 tablespoons water
  • 2 cloves garlic pressed
  • 1 teaspoon dried thyme

Instructions
 

  • Melt a little coconut oil in a large skillet over medium-high heat.
  • Lightly season fish with salt and pepper then add to the skillet and sear for 3 to 4 minutes per side. Remove from skillet and keep warm.
  • In the same skillet, melt a little more coconut oil over medium-high heat.
  • Add remaining ingredients (tomatoes through thyme); bring to a boil then reduce heat and simmer for 1 to 2 minutes.
  • Serve sauce over fish and enjoy it!
