Melt a little coconut oil in a large skillet over medium-high heat.
Lightly season fish with salt and pepper then add to the skillet and sear for 3 to 4 minutes per side. Remove from skillet and keep warm.
In the same skillet, melt a little more coconut oil over medium-high heat.
Add remaining ingredients (tomatoes through thyme); bring to a boil then reduce heat and simmer for 1 to 2 minutes.
Serve sauce over fish and enjoy it!
