Melt the ghee in a large skillet over medium-high heat.
Add salmon fillets and lightly season with salt and pepper; sear for 3 to 4 minutes per side then remove from pan and set aside.
Add remaining ghee to the skillet along with remaining ingredients (lime juice through ginger); reduce heat to medium.
Whisk for 1 minute then reduce heat to low and simmer for 2 minutes.
Serve sauce over salmon.
