In a large skillet over medium heat, melt the coconut oil. To the skillet, add the kale and garlic. Cook for 10 minutes, until tender. Stir in next 4 ingredients (red pepper flakes through oregano).
Cook for 5 to 10 minutes, until the mixture starts to bubble and thicken. Add the sausage, season with salt and pepper and continue to cook for 5 to 7 minutes, until sausage is cooked through and vegetables are tender.
