Garlic Herb Pork Chops

Ingredients
  

  • 1 tablespoon olive oil
  • 4 pork chops
  • 1 large onion
  • 1 1/2 cups diced fresh tomatoes
  • 5 cloves garlic diced
  • 2 teaspoons oregano
  • 1 teaspoon sage
  • 1 teaspoon basil

Instructions
 

  • Heat oil in a large pan on medium heat for 20 seconds. Brown pork chops 1 minute on each side.
  • Stir in onions and flip pork chops after 2 minutes on each side.
  • Add tomatoes, garlic and spices. Simmer for 8 minutes.

Notes

SERVING SUGGESTION: Serve on a bed of zucchini pasta. (Julienne or cut large zucchini lengthwise into thin strips; stir-fry in a skillet coated with olive oil over medium-high heat until slightly limp).
