Grilled Chile Rubbed Pork Chops

Ingredients
  

  • 2 tablespoons olive oil
  • 3 tablespoons New Mexican chili powder
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 tablespoon cumin
  • 1 tablespoon honey
  • 1 teaspoon allspice
  • sea salt and freshly ground black pepper to taste
  • 6 pork chops 6-ounce

Instructions
 

  • In a large bowl, add olive oil, chile powder, garlic, thyme, cumin, honey, allspice and sea salt and freshly ground black pepper to taste. Marinate in the refrigerator for 30 minutes.
  • On an outdoor or indoor grill heat olive oil over medium high heat and grill pork 7 to 8 minutes per side until cooked through. Remove and thinly slice pork.

Notes

SERVING SUGGESTION: Steamed cauliflower and steamed small new red potatoes tossed with a little butter and chopped parsley.
VEGETARIAN: Use tofu instead of pork chops.
