In a large pot on medium-high heat, heat oil and add the garlic through onion. Cook until soft and then add in the ground pork, salt, pepper, oregano and basil. Cook until the meat is browned, breaking up with a spoon.
Add the next 5 ingredients (zucchini through coconut milk), stir and reduce heat to medium-low and bring to a simmer, seasoning with salt and pepper to taste. Cover and cook for 30 minutes, stirring regularly. Stir in the spinach and cilantro and serve.

SERVING SUGGESTION: Serve with sliced avocado, sprinkled with chopped cilantro, a squeeze of lime and a sprinkling of sea salt.
