Heat 2 tablespoons of olive oil in a large saucepan over medium-high heat until hot.
Add ground turkey; season with salt and pepper then cook for 8 minutes or until browned; set aside.
Add remaining 1 tablespoon of olive oil to the pan, followed by the onion, celery and carrot; cook, stirring often, for 5 minutes or until onion is translucent and celery and carrot have softened.
Return ground turkey to the skillet then stir in honey, ketchup, mustard, vinegar, Worcestershire sauce and chili powder.
In a small bowl, whisk together cornstarch and water; gradually stir into ground turkey mixture. Bring to a boil then reduce heat and simmer for 20 minutes to allow flavors to blend. Check for seasoning before serving.
