Chocolate Mint Chia Seed Pudding

Ingredients
  

  • 2 cups dry chia seeds
  • 4 cups unsweetened coconut milk
  • 3 tablespoons raw honey
  • 3 tablespoons cocoa powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon peppermint extract
  • pinch sea salt

Instructions
 

  • In a large bowl, whisk all the ingredients well.
  • Cover bowl and refrigerate for at least 2 hours (until pudding is set). Serve cold.
