Slow Cooker Garlic Leek Lemon Chicken

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breast cubed
  • 3 1/2 cups low sodium chicken broth
  • 1/2 cup lemon juice
  • 1 cup leeks chopped
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 6 cloves garlic pressed
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 1/2 teaspoon lemon zest
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions
 

  • Place all ingredients in a slow cooker. Stir well to combine.
  • Cover and cook on LOW for 6 to 8 hours or until chicken is cooked through. Serve and enjoy!

Notes

SERVING SUGGESTION: Mashed russet potatoes and steamed green beans. VEGETARIAN: Replace chicken with 15 ounces each navy beans and kidney beans (drained and rinsed or homemade).
