Spring Spiced Stew

Ingredients
  

  • 3 pounds beef stew meat cubed
  • 1 medium red onion roughly chopped
  • 3 cloves garlic pressed
  • 1 jalapeno pepper de-seeded and diced
  • 1 medium red bell pepper de-seeded, de-ribbed and chopped
  • 2 medium stalks celery chopped
  • 1 14.5-oz.can stewed tomatoes
  • 1 14.5-oz. can diced tomatoes
  • 2 cups low sodium beef broth
  • 1 tablespoon cider vinegar

Instructions
 

  • Place all ingredients in a large slow cooker; stir well to combine.
  • Cover and cook on LOW for 8 to 10 hours, stirring twice.
