Florentine Pork Chops

Ingredients
  

  • 1 tablespoon olive oil
  • 4 boneless pork chops
  • 1 tablespoon oregano
  • Sea salt and freshly ground black pepper to taste
  • 1 10-oz. package frozen chopped spinach thawed and drained
  • 3 cloves garlic pressed
  • 1/3 cup fat-free half and half
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup grated Parmesan cheese

Instructions
 

  • Heat the olive oil in a large skillet over medium heat; add pork chops and season with oregano and salt and pepper to taste; brown chops on both sides and cook through.
  • Remove from skillet and keep warm.
  • Add spinach and garlic to skillet and sauté for a minute or two. Slowly add half and half, blending well. Sprinkle cheese on top and stir to melt cheese.
  • Return pork chops to skillet and heat through. Serve chops over spinach mixture.
