In a small bowl, combine first 6 ingredients (instant coffee through ginger). Blend well then rub mixture into pork chops.
Melt the coconut oil in a large skillet over medium-high heat. Sear pork chops for 5 to 7 minutes per side or until cooked through. Serve and enjoy!
