Sour Cream and Leek Chicken

Ingredients
  

  • 1 pound boneless skinless chicken thighs chopped
  • 3 large stalks celery minced
  • 4 cups chopped spinach
  • 1 large carrot chopped
  • 1 large leek chopped
  • 1 cup whole milk
  • 2 cups coconut cream
  • Sea salt and freshly ground black pepper to taste
  • 2 cloves garlic minced

Instructions
 

  • To a large crock cooker, add all the ingredients (chicken through garlic). Mix well, cover and cook on LOW for 6 to 8 hours, until chicken is cooked through and vegetables are tender. Serve warm.
