1largebaguettecut into 4 pieces and then sliced in half and toasted
1/4cupVegan mayonnaise
1tablespoonSriracha
1mediumcucumberpeeled and sliced thinly lengthwise
1cupshredded carrots
1cupbean sprouts
1largeavocadopitted and sliced
1largejalapeno peppersliced thin
2largelimes
sea salt
Instructions
In a small bowl, combine vegan mayo and sriracha. Spread onto 1 side of each set of baguettes. Then evenly layer cucumber, carrots, sprouts, avocado, and jalapeno.
Saturate everything with lime juice and lightly season with salt. Sandwich with second piece of baguette and serve.
