Chicken

  • 1 1/2 lbs boneless skinless chicken breast cut to bite size
  • 1 tablespoon coconut oil or avocado oil
  • 3/4 teaspoon sea salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 1/2 teaspoon chili powder
  • 1 pinch chipotle chili powder
  • 2 limes lime juice

Cauliflower Rice

  • 1 lb Cauliflower rice Costco 5 lb bag
  • 1 tablespoon coconut oil or avocado oil, ghee
  • 3/4 teaspoon sea salt
  • 1-2 tablespoon fresh lime juice
  • 1 whole jalapeno pepper minced without seeds
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • 1 dash chipotle chili powder

Peppers and Onions

  • 1 large onion sliced thin
  • 1 large red bell pepper sliced thin
  • 1 tablespoon coconut oil or other cooking fat
  • sea salt to taste

Guacamole

  • 2 avocados
  • 1/4 cup minced onion
  • 2 cloves garlic minced
  • 1 jalapeno pepper minced
  • 2 tablespoon fresh lime juice or to taste
  • 2 tablespoon chopped fresh cilantro
  • sea salt to taste
