Citrus Herb Salmon Salad

Ingredients
  

  • 2 5 ounce cans salmon drained,
  • 1/3 cup paleo mayo
  • 2 teaspoons apple cider vinegar
  • 1 large lemon juiced and zested
  • 2 tablespoons fresh dill
  • 1/4 cup minced chives
  • 2 cups chopped cucumber
  • 1 cup arugula shredded
  • 1 large avocado peeled, pitted and sliced
  • sea salt and freshly ground black pepper to taste
  • 1 small head of romaine lettuce removed and washed

Instructions
 

  • In a large bowl, combine all ingredients except lettuce (salmon through salt and pepper). Once fully mixed together, serve in lettuce leaves!
