Chicken Citrus Salad

Ingredients
  

  • 2 large boneless skinless chicken breasts cooked and chopped
  • 1/3 cup paleo mayo
  • 2 teaspoons apple cider vinegar
  • 1 large lime juiced and zested
  • 2 tablespoons chopped cilantro
  • 1/4 cup minced chives
  • 2 cups chopped cucumber
  • 1 cup baby kale
  • 1 large avocado peeled, pitted, and sliced
  • sea salt and freshly ground black pepper to taste
  • 1 large head romaine lettuce leaves removed and washed

Instructions
 

  • In a large bowl, combine all ingredients EXCEPT lettuce (chicken through salt and pepper). Once fully mixed together, serve in lettuce leaves!
