Shepherd’s Pie

Ingredients
  

  • olive oil
  • 1 medium onion chopped
  • 1 large carrot chopped
  • 1 medium stalk celery chopped
  • 3 cloves garlic pressed
  • 1 1/2 pounds ground beef sirloin
  • 1 14.5-oz. can stewed tomatoes
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons dry red wine
  • 3 tablespoons tomato paste
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary crushed
  • 1 head cauliflower steamed
  • 3 tablespoons ghee or use olive oil
  • 3/4 cup unsweetened coconut milk
  • 1 teaspoon sea salt
  • 2 teaspoons freshly ground black pepper

Instructions
 

  • DO-AHEAD TIP: Steam cauliflower.
  • Preheat oven to 350 degrees.
  • Heat the olive oil in a large skillet over medium-high heat. Add onion, carrot, celery, and garlic; cook and stir for 1 minute or until onions start to become translucent. Add ground sirloin and cook for 4 to 7 minutes or until browned and cooked through.
  • Transfer mixture to a large (and deep) baking dish; add next 9 ingredients (tomatoes through rosemary); stir until well blended and somewhat thickened.
  • In a large saucepan, combine remaining ingredients for Faux-Tay-Toes (cauliflower through pepper); mash together until fully blended.
  • Evenly spread cauliflower mixture over meat/tomatoes mixture in baking dish; bake for 25 minutes or until cauliflower turns golden brown on top.

Notes

SERVING SUGGESTION: Add steamed broccoli spears on the side.
