Preheat oven broiler.
Place a sheet of aluminum foil wrap on a baking sheet and coat it with a little olive oil. In a small bowl,
whisk together 1/2 tablespoon of lemon juice, the melted butter, mustard, vinegar, honey, tarragon,
salt and pepper.
Place tilapia on prepared baking sheet and broil for 3 minutes; turn and drizzle with about half of the
lemon juice mixture. Continue to broil for 3 minutes then turn and drizzle with remaining lemon juice
mixture.
Broil for another 2 minutes or until fish flakes easily when tested with a fork. Remove from heat and
sprinkle with remaining lemon juice; serve.
