Raspberry Balsamic Pork

Ingredients
  

  • 2 pounds pork tenderloin
  • 2 tablespoons ghee or use coconut oil, melted
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 medium red onion chopped
  • 3 tablespoons raw honey
  • 1/2 cup raspberries fresh or frozen
  • 1/4 cup balsamic vinegar
  • 1/3 cup red wine
  • 1/2 teaspoon dried rosemary crushed

Instructions
 

  • Place tenderloin in a large slow cooker.
  • In a small bowl, whisk together remaining ingredients (ghee through rosemary); pour over tenderloin in slow cooker.
  • Cover and cook on LOW for 8 to 10 hours.

Notes

SERVING SUGGESTION: Baked sweet potatoes and steamed baby Brussels sprouts.
