Combine quinoa with 2 cups of water in saucepan, cover, bring to a boil, turn heat down to low, cook 15 minutes, let sit another 10 minutes, then fluff with a fork.
While quinoa cools, chop all vegetables and add to salad bowl.
Make the dressing by juicing the lemon, whisking in olive oil, and adding salt and pepper to taste. Mix in with vegetables.
Add quinoa and feta cheese to salad bowl and serve.
