Halibut with Cucumber Salsa

Ingredients
  

  • 2 cups finely chopped cucumber
  • 1/2 cup finely chopped tomato
  • 1/4 cup chopped red onion
  • 2 tablespoons minced fresh parsley
  • 1 large jalapeno pepper seeded and chopped
  • 4 teaspoons minced fresh cilantro
  • 1 clove garlic minced
  • 1/4 cup sour cream
  • 1 1/2 teaspoons lemon juice
  • 1 1/2 teaspoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon sea salt
  • 4 halibut fillets
  • olive oil

Instructions
 

  • In a medium sized bowl, combine cucumber, tomato, onion, parsley, jalapeño, cilantro and garlic.
  • In a small bowl, combine sour cream, lemon juice, lime juice, cumin and salt. Pour over cucumber mixture and toss gently to coat.
  • Preheat grill to medium high heat. Coat with olive oil and place halibut on rack, grill 5-7 minutes per side until fish flakes easily with a fork.
  • Top fish with salsa and serve warm.

SERVING SUGGESTION: Big spinach salad.
