Grilled Pork and Zucchini Kabobs

Ingredients
  

  • 2 teaspoons olive oil
  • sea salt and freshly ground black pepper to taste
  • 1/2 teaspoon ground sage
  • 1 teaspoon minced thyme
  • 2 tablespoons fresh lemon juice
  • 3 cups cubed boneless pork chops
  • 2 large zucchini sliced
  • 1 large red onion cut into wedges
  • 2 cups cherry tomatoes
  • 1 clove garlic minced

Instructions
 

  • Heat grill to medium heat.
  • In a large bowl, toss together the olive oil thru lemon juice. Add the pork and the veggies, and thread each ingredient onto large skewers. Place skewers on the grill and cook for 5 to 10 minutes on each side until the pork is cooked through and vegetables are tender. Serve warm.

Notes

Serving Suggestion: Serve with sliced avocado, sprinkled with chopped cilantro, a squeeze of lime and a sprinkling of sea salt & Big Salad tossed with Leanne’s Basic Vinaigrette (1 head lettuce (any kind but not iceberg), torn, Salad veggies of choice, 2 tablespoons extra virgin olive oil, 1 tablespoon balsamic vinegar, 1 garlic clove, pressed, Dried basil, to taste, Dried oregano, to taste:
Directions- In a large bowl, toss together torn lettuce and salad veggies of your choice. In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, garlic and a pinch of dried basil and oregano; drizzle dressing over salad.)
