Broccoli and Pulled Asian Pork

Ingredients
  

  • 1 pound pork shoulder cubed
  • 1 cup coconut aminos
  • 2 tablespoons avocado oil
  • 1 1/4 cups low sodium chicken broth or use bone broth
  • 1 cup chopped mushrooms
  • 3 cups broccoli slaw
  • 1 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground coriander
  • sea salt and freshly ground black pepper to taste

Instructions
 

  • In a large crock cooker, add the pork. In a large bowl, mix the coconut aminos, oil and chicken broth. Pour the liquids over the pork. To the crock cooker, add the remaining ingredients and cover. Cook on LOW for 6 to 8 hours, until pork is very tender and white in the center. Remove pork and shred with two forks. Return pork to the crock cooker and stir. Serve warm.
