boneless skinless chicken thighs
cubed

low sodium chicken stock
or use bone broth
sea salt and freshly ground black pepper
to taste

marinated artichoke hearts
chopped

cup
greek olives
pitted, chopped

large ribs
celery
chopped

baby spinach

ground cumin

lemon
zest and juice

tablespoons
chopped fresh mint
Instructions
In a large skillet over medium heat, heat the oil.
To the skillet, add the garlic, onion and chicken.
Stir and cook for 5 minutes, then add the remaining ingredients (chicken stock through mint).
Reduce heat to low and cook for 15 minutes, or until chicken is cooked through and vegetables are tender.
Serve warm.
