Moroccan Beef Chili

Ingredients
  

  • 2 tablespoons olive oil
  • 2 pounds beef chuck roast cut into 2 inch cubes
  • 2 large red onions chopped
  • 3 cloves garlic chopped
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon red pepper flakes or to taste
  • 2 large sweet potatoes peeled and cut into 1 inch cubes
  • 1 15-oz. can crushed tomatoes
  • 1/2 cup chopped dried apricots
  • 1 15-oz. can chickpeas drained and rinsed
  • 2 cups low sodium beef broth
  • 1/2 cup red wine or low sodium beef broth
  • Coarse sea salt and freshly ground black pepper to taste

Instructions
 

  • In a large skillet, heat olive oil over medium heat and sear beef 3 to 4 minutes until browned.
  • In a large slow cooker, add beef and remaining 13 ingredients (onions through pepper) and cook on low for 8 hours until beef is cooked through.

Notes

SERVING SUGGESTION: Warm buttered corn muffins.
VEGETARIAN: Use portobello mushrooms instead of beef chuck and adjust cook time.
GLUTEN FREE: Make sure tomatoes, beef broth and red wine are gluten free.
