Chicken and Tomato Soup

Ingredients
  

  • 1 pound boneless skinless chicken thighs
  • 1 large onion chopped
  • 3 medium cloves garlic minced
  • 2 14.5-oz. cans diced tomatoes
  • 2 cups sliced mushrooms
  • 2 large stalks celery chopped
  • Sea salt and freshly ground black pepper to taste
  • 1 tablespoon chili powder
  • 3 cups low sodium chicken broth or use homemade
  • 4 tablespoons coconut aminos
  • 2 teaspoons chopped fresh rosemary

Instructions
 

  • Place all ingredients in a large crock cooker; stir well to combine.
  • Cover and cook on LOW for 6 to 8 hours or until chicken is cooked through and vegetables are tender.
  • Serve warm.
