Turkey and Parsnip Bisque Soup

Ingredients
  

  • 1 large boneless skinless turkey breast
  • 1 large parsnip chopped
  • 1 small carrot chopped
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 large stalks celery chopped
  • sea salt and freshly ground black pepper to taste
  • 1 cup heavy cream
  • 4 cups low sodium chicken broth
  • 1 teaspoon lemon zest
  • 2 tablespoons ground cumin
  • 1 teaspoon dried oregano

Instructions
 

  • In a large crock cooker, add all the ingredients and stir.
  • Cover and cook on LOW for 6 to 8 hours, until turkey is cooked through. Serve warm.
