Kickin' Blackberry Chicken

Ingredients
  

  • 4 6-oz. boneless skinless chicken breast halves
  • 2 cloves garlic pressed
  • 1 tablespoon paprika
  • 1 dash cayenne pepper
  • 2 tablespoons minced jalapeno
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup low sodium chicken broth
  • 2 tablespoons cider vinegar
  • 2 tablespoons honey
  • 1 cup sliced red onion
  • 1/2 cup blackberries fresh or frozen

Instructions
 

  • Preheat oven to 350 degrees. Place chicken breast halves in a lightly oiled baking dish.
  • In a medium saucepan over medium heat, combine remaining ingredients (garlic through blackberries); bring mixture to a boil then reduce heat to medium and cook, stirring constantly, for 3 minutes or until blackberries break down into a sauce.
  • Pour sauce over the chicken; bake for 35 to 45 minutes or until chicken juices run clear. Serve immediately and enjoy!
