Cajun Meatloaf

There’s just nothing like Cajun cuisine! It’s not hard to imagine a long line of diners requesting second helpings of this meatloaf!

Ingredients
  

  • 1 1/2 pounds ground beef
  • 1/3 cup almond flour or almond meal
  • 1 egg
  • 1 small onion diced
  • 3 cloves garlic pressed
  • 1 medium carrot minced
  • 1 medium stalk celery minced
  • 2 tablespoons tomato paste
  • 2 tablespoons ghee melted, or use coconut oil
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano

Instructions
 

  • Preheat oven to 300 degrees.
  • Place all ingredients in a large bowl. Blend thoroughly with your very clean hands then place mixture in a loaf pan.
  • Bake for 30 minutes or until cooked through. Serve and enjoy!!

Notes

SERVING SUGGESTION: Baked sweet potatoes and braised collard greens.
