Melt the coconut oil in a large skillet or wok over medium-high heat. Add next 6 ingredients (bell peppers through gingerroot); stir-fry for 3 to 4 minutes.
Add steak strips and stir-fry for 5 minutes. Add remaining ingredients (pineapple juice through sea salt); reduce heat to medium-low then stir well and simmer for 8 to 10 minutes.
Remove from heat and allow mixture to sit for 5 minutes before serving.
