Dijon Meatballs

Ingredients
  

Meatballs:

  • 2 pounds lean ground beef
  • 1 medium yellow onion minced
  • 3 cloves garlic pressed
  • 2 tablespoons ghee or coconut oil melted
  • 1 egg
  • 1/4 cup almond flour or almond meal or coconut
  • sea salt and freshly ground black pepper to taste
  • 1 teaspoon ground cumin
  • 3 tablespoons minced parsley

Sauce:

  • 1 tablespoon ghee or coconut oil
  • 1/4 cup Dijon mustard
  • 1/4 cup white wine
  • 1 clove garlic pressed
  • 2 tablespoons raw honey
  • 1/2 to 1 tablespoon almond flour or almond meal for thickening
  • sea salt and freshly ground black pepper to taste
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder

Instructions
 

  • Preheat grill to MEDIUM-HIGH.
  • In a large bowl, place all ingredients for meatballs; using your very clean hands, combine thoroughly then form into 1- to 2-inch meatballs. Grill meatballs for 4 to 5 minutes per side (rotating all sides) or until cooked through.
  • Prepare sauce: Melt the ghee or coconut oil in a small saucepan over medium heat. Add mustard, wine, garlic and honey, whisking individually as you add each item. Reduce heat to low then add remaining ingredients, again whisking individually as you add them. Simmer sauce for 5 to 10 minutes then serve over meatballs.
